Having had a few differing CCD cameras recently, I see that the Camera Manager menu is full of the older ones.
Is there any way to delete/remove them, so the only one that is in there relates to the camera(s) that I currently have?

Select the line(s) to be removed then press the delete key (same as removing an image in Image Manager).
